This Cajun pasta dish is pretty popular out there. Not only is it easy to make but it is versatile with ingredients. You can add shrimp, crawfish, or anything "Cajun" you want. Give this simple dish a try.

Andouille sausage | 8 Ounce , diced | |
Garlic cloves | 3 , chopped | |
Onion | 1 , chopped | |
Red bell pepper | 1 , chopped | |
Green bell pepper | 1 , chopped | |
Ground black pepper | To Taste | |
Salt | To Taste | |
All purpose flour | 2 Tablespoon | |
Beer | 1/2 Bottle (0.5 l) | |
Chicken stock | 1 Cup (16 tbs) | |
Fresh thyme | 2 Tablespoon , chopped | |
Chicken breast | 8 Ounce , diced into small pieces | |
Heavy cream | 1/2 Cup (8 tbs) | |
Scallions | 2 |
MAKING
In a skillet heat the butter and oil, once the butter has melted add sausage and let it crisp up for 5 minutes, once done remove it.
To the same skillet add the onion, bell peppers, garlic let it cook for 2 minutes till the contents turn translucent.
Add the flour and let it cook for a few minutes. Now add the beer and cook out the alcohol.
Add the chicken stock, season with salt and pepper.
Add the chicken breast and let it cook. Once done add in the heavy cream.
Flavor the sauce with fresh thyme.
Once the sauce is almost done add ½- ¾ of the cooked sausage to it.
Add a pound of pasta to the sauce, coat it up well.
SERVING
Garnish with the reserved sausage and serve hot.
