This is a dish I had growing up in Guam and is simply killer. You can make it with other proteins but I have always used chicken.
|For fina denne sauce|
|Soy sauce||2/3 Cup (10.67 tbs)|
|Vinegar||1/2 Cup (8 tbs)|
|White onions||1/4 , diced (green onions or red onions are optional)|
|Donne peppers/Dinache||4 , finely chopped|
|Boneless skinless chicken thighs||10|
|Lime pepper||To Taste|
|Coconut||1 , grated|
|Chili peppers/Habeneros||10 , finely chopped|
|Green onions||1 Bunch (100 gm) , finely chopped|
|Juice of lemon||6|
For the sauce – in a large bowl, add in all the ingredients and refrigerate.
Season the chicken thigh with lemon pepper and grill until done.
Take out the chicken and let it cool for sometime.
Chop the chicken bite size and squeeze the lemon; toss well.
Add in the chili, green onion, coconut and salt. Mix well.
In a platter, place rice and top with chicken and sauce. Serve and enjoy.
