Summertime to me means delicious, juicy watermelon. This easy to make side dish only requires a few ingredients and is the perfect way to soak up Summertime!
|Grated coconut||1 Cup (16 tbs)|
|Coconut milk||1 Cup (16 tbs) (nariyal ka doodh)|
|Sliced sweet peppers||1 Cup (16 tbs)|
|Julienned carrots||1 Cup (16 tbs)|
|Sliced green onions||1/2 Cup (8 tbs)|
|Mung bean sprouts||1 Cup (16 tbs)|
|Chopped cilantro||1/4 Cup (4 tbs)|
1.On a plate add the sliced watermelon or add the watermelon chunks in a bowl.
2. To the watermelon add the blueberries, thinly sliced red onion, feta chunks, mint leaves, salt, and pepper.
3.Drizzle with a small amount of balsamic, and serve! The easiest, prettiest, and most delicious side dish ever.
