BLT with Avocado and Lemon Thyme Mayo

Who doesnt love a good BLT? Come on!! I know I do. This BLT (if you can even believe it) is better than the original. The lemon thyme mayo adds a pop of freshness that I think every BLT needs. This recipe is so easy and delicious and perfect for a satisfying lunch.

Ingredients

Bread slices 8 Large , toasted ((of your choice))
Bacon 1 Pound , cooked
Tomatoes 3 Large , thickly sliced
Lettuce head 1 Medium , leaves removed
Avocados 2 Medium , sliced
Mayonnaise 1/4 Cup (4 tbs)
Chopped fresh thyme 1/2 Teaspoon
Lemon zest 1 Teaspoon
Salt To Taste
Cracked black pepper To Taste

Directions

GETTING READY

1. Preheat oven at 400 F.

2. Using a serrated knife, cut the tomato in thick slices.

3. Cut the avocado in half, remove the pith, run the knife through the flesh without cutting the skin and scoop out the flesh using a spoon.

MAKING

4. In a parchment lined baking sheet, place the bacon and bake for 25 minutes, until brown and crispy, or you can also fry it.

5. In a bowl, put together mayonnaise, thyme and lemon zest, and stir well to mix.

6. Spread each toasted bread slice with some lemon mayonnaise.

7. Place 4 slices on cutting board, and layer it with sliced tomato, bacon slices, avocado slices, and lettuce leaves.

8. Sprinkle salt and pepper over the remaining 4 bread slices and top them over the lettuce.

SERVING

9. Cut in half and serve as desired.
