How to Make a Quinoa Salad

Quinoa is a great source of protein for vegetarians and still satisfying enough for meat lovers. This delicious and super-healthy salad makes for the perfect lunch or even a nice side dish for your next dinner.

Ingredients

Olive oil 2 Tablespoon
Quinoa 1 Cup (16 tbs)
Chicken stock/Vegetable stock 1 3/4 Cup (28 tbs)
Red onion 1/4 Cup (4 tbs) , thinly sliced
Grape tomato 1/2 Cup (8 tbs) , halved
Cucumber 1/2 Cup (8 tbs) , chopped
For dressing
Lemon 1 , zested and juiced
Extra virgin olive oil 3/4 Cup (12 tbs)
Salt and pepper To Taste
Fresh basil 1 Tablespoon , chopped
Fresh parsley 2 Tablespoon , chopped

Directions

MAKING

1. Place a large pan over medium-high flame, heat olive oil and toast quinoa for 2 minutes.

2. Slowly stir in the chicken or vegetable stock and bring back to a boil. Place a lid over top of the pan, turn the heat to medium-low and simmer the quinoa for 12-15 minutes or until tender.

For Dressing:

3. In a large bowl, combine lemon zest and lemon juice. Whisk in extra virgin olive oil.

4. Add fresh basil, parsley and season with salt and pepper to taste.

FINALIZING

5. In a large bowl, combine the cooked quinoa, red onion, grape tomatoes, cucumber and the dressing. Toss to combine. Taste and adjust seasoning of salt and pepper.

SERVING

6. Serve and enjoy!
