Salad Recipe-Apple and Pomegranate Chicken Salad

This healthy but incredibly tasty Fall inspired lunch is my current obsession. I love using leftover chicken or a rotisserie chicken to make it extra speedy.

Ingredients

Shredded cooked chicken 4 Cup (64 tbs)
Apple 1/2 , dice
Pomegranate seeds 1/4 Cup (4 tbs)
Roughly chopped walnuts 1/4 Cup (4 tbs)
Fresh thyme sprigs 5 (leaves removed)
Greek yogurt 1/2 Cup (8 tbs)
Champagne vinegar 1 Tablespoon
Honey 1 Teaspoon
Salt To Taste
Pepper To Taste

Directions

MAKING:

1.In a bowl combine add the chicken, diced apple, pomegranate seeds, chopped walnuts, and fresh thyme leaves.

2.In another small bowl whisk together the Greek yogurt, vinegar, honey, salt, and pepper until combined.

3.Add the yogurt mixture to the chicken, toss until coated.

SERVING:

4.Serve and enjoy!

TIP:

You can add it to a sandwich, wrap, or eat it over greens. Enjoy!
