Powdered sugar | 1/2 Cup (8 tbs) | |
Oil | 1/4 Cup (4 tbs) | |
Milk | 1/2 Cup (8 tbs) | |
Baking soda | 1/2 Teaspoon | |
Milk powder | 2 Tablespoon | |
Vinegar | 1 Teaspoon | |
Vanilla essence | 1 Teaspoon | |
Mixed dry fruits | 3/4 Cup (12 tbs) | |
Salt | 1 Pinch | |
Mixed dry fruit | 3 Tablespoon (For topping) |
GETTING READY
1. Pre-heat the pressure cooker on medium to low flame. Add salt, place a perforated plate over salt. Close the lid and preheat the cooker.
2. Mix milk with vinegar. Keep it aside.
MAKING
3. Sift plain flour, milk powder, baking soda and salt in a clean bowl. Mix in powdered sugar. Put this flour mixture aside.
4. Beat together oil, vanilla essence and milk-vinegar mix together.
5. Take a couple of tablespoons of flour mixture and drop in the dried fruits. Mix to coat them well.
6. Whisk together the remaining flour mixture with the wet mixture. Fold the dry fruits into the batter.
7. Line and prepare the baking moulds.
8. Pour the muffin batter into the moulds. Gently place the moulds in the cooker.
9. Bake for about 15 minutes or until well done.
10. Repeat to bake all the batches.
