Betty's Chi-Chi-Chi Chia Seed Muffins -- Mother's Day

In this video, Betty demonstrates how to make Chia Seed Muffins. Chia seeds are very nutritious, with a serving providing the potassium of 2 bananas, 3 times the antioxidants of blueberries, plus protein, Omega-3 fatty acids, and fiber. Plus, the muffins taste wonderful!

Ingredients

Butter 1/2 Cup (8 tbs) , softened (1 stick)
Sugar 3/4 Cup (12 tbs)
Eggs 2 Large , beaten
Plain yogurt 3/4 Cup (12 tbs)
Vanilla extract 1 1/2 Teaspoon
All purpose flour 2 Cup (32 tbs)
Chia seeds 1/3 Cup (5.33 tbs)
Salt 1/2 Teaspoon
Baking soda 1/4 Teaspoon
Cinnamon sugar To Taste (2 tablespoons sugar +1/4 teaspoon cinnamon) (Optional)

Directions

GETTING READY

1. Preheat oven to 375 degree F.

2. Line muffin pan with paper liners and set aside.

MAKING

3. In a large bowl, cream together butter and sugar until light and fluffy.

4. Add eggs, yogurt, and vanilla. Blend well.

5. In a separate bowl, combine flour, chia seeds, salt, and baking soda.

6. Slowly add dry ingredients into the bowl with wet mixture. Blend until just combined. Do not over mix.

7. Fill each muffin cup with batter, about 2/3 of the way up.

8. Sprinkle with cinnamon sugar, if desired on top.

9. Pop the tin on oven and bake for 15-20 minutes or until golden brown.

10. Remove from oven and cool slightly before removing from tin.

SERVING

11. Serve with some butter and enjoy!
