High Fibre Muffin

In this recipe video we use the Fibre left over from our Breville Ikon Juice machine. Dont throw out that fibre you need it in your diet. This recipe can use any leftover fibre from juicing.

Ingredients

Vegetable and fruit pulp fiber 2 Cup (32 tbs) (Fibre left over
Pineapple 1/4 Cup (4 tbs)
Egg 2
Molasses 1/8 Cup (2 tbs)
Yoghurt 1/4 Cup (4 tbs)
All purpose flour 1 1/2 Cup (24 tbs)
Sugar 1 Cup (16 tbs)
Salt 1 Teaspoon
Baking soda 2 Teaspoon
Cinnamon 2 Teaspoon

Directions

GETTING READY

1. Preheat oven at 350 degree.

MAKING

2. In a large bowl, add fruit and vegetable pulp, pineapple, yogurt, eggs, and molasses. Mix it well.

3. Then, insert flour, sugar, baking soda, salt and cinnamon in it. Stir to combine.

4. Line muffin tray with parchment paper, pour mixture, and pop it in oven for 20 minutes.

5. Take the tray out of oven and allow it to cool.

SERVING

6. Serve fibre muffin with a cup of hot coffee.

TIPS

You can put muffins in refrigerator and enjoy it later.
