Carrot Apple Coconut Muffins - Healthy Desserts

Easter is almost here and my kids are already asking what kind of treats they'll be getting. Carrot Apple Coconut Muffins are the answer!


All purpose flour 1 1/2 Cup (24 tbs)
Baking powder 1 Teaspoon
Baking soda 1/2 Teaspoon
Salt 1/2 Teaspoon
Unsweetened coconut flakes 1/2 Cup (8 tbs)
Carrots 2 , grated ((peeled))
Apple 1 , grated ((peeled, gala, fuji, pink lady or red delicious are good choices))
Eggs 2 Large
Vanilla extract 1 Teaspoon
Milk 1/3 Cup (5.33 tbs)
Oil 1/4 Cup (4 tbs) ((Vegetable or Canola))
Honey 1/2 Cup (8 tbs)
Non stick cooking spray 1



1.Preheat oven to 350F.

2.Grease muffin tray with cooking spray.


3.In a bowl, combine flour, baking powder, baking soda, salt, coconut flakes, grated carrots, grated apple and mix well.

4.In another bowl, combine eggs, vanilla extract, milk, oil, honey and whisk well.

5.Add flour mixture with egg mixture and stir well to combine.

6.Fill muffin tray as shown in the video and pop into oven.

7.Bake for 15 minutes.


8.Serve and enjoy!
