There are many many recipes out there, but this Buffalo Chicken Dip is on Cowboy crack, I promise you. For beginners, the Chicken is marinated in Buffalo hot sauce and studded with Garlic and Jalapeno and char grilled before it gets folded into the other ingredients like cream cheese, sour cream, ranch dressing, spring onions, jalapeno, buffalo and hot sauce and cheese!
As a centerpiece, I decided to use a small Jalapeno and stick rice grains in it to look like a cactus, it turned out so well I was thrilled.
For chicken and marinade: | ||
Boneless chicken thighs | 500 Gram | |

Franks red hot sauce | 1/4 Cup (4 tbs) (or any other hot sauce but adjust the amount based on the spice level) | |

For dip: | ||
Cream cheese | 250 Gram | |
Sour cream | 1 Cup (16 tbs) | |
Ranch dressing | 1/2 Cup (8 tbs) | |
Buffalo sauce | 1/2 Cup (8 tbs) | |
Franks red hot sauce | 2 Tablespoon (or any other hot sauce but adjust the amount based on the spice level) | |

Sliced spring onions | 2 Tablespoon | |

Cooked bacon bits | 1/2 Cup (8 tbs) | |

GETTING READY:
1. Marinate the Chicken with all the ingredients listed under Chicken & Marinade and allow it to marinate from a few hours to overnight.
MAKING:
2. Cook this on a hot BBQ and when cool cut the chicken into a small dice.
3. Also add the slices of Jalapeno so they char as well and keep aside.
4. Warm up the cream cheese in the mocrowave so it’s spreadable and add the sour cream, ranch dressing, buffalo sauce, hot sauce, slat & pepper, spring onions, jalapeno, bacon bits, shredded cheese and a little more than half of the diced chicken and mix it together well
5. Spread this into an oven safe dish and top with all the ingredients listed under Topping and bake in a preheated oven at 350 degrees centigrade for 15 – 20 mins.
SERVING:
6. Serve with crackers, crisps or tortilla chips.
