These Stuffed Spiced apples are brined, then stuffed with a savory filling with herbs and topped with Cheddar. The Apples are just about cooked till the cheese melts to maintain that nice crunchy and juicy exterior. If youre having a sit-down Fall or Christmas lunch or dinner, this is the perfect start to the meal and looks incredible.

Ingredients

For brine:
Salt 1/4 Cup (4 tbs)
Sugar 1/4 Cup (4 tbs)
Water 4 Liter ((2 ltr warm and 2 ltr cold))
Chilli powder 1/2 Teaspoon
Gala apples 4
For filling:
Diced onions 1/2 Cup (8 tbs)
Minced jalapeno 2 Tablespoon
Minced garlic 2 Tablespoon
Minced chicken 500 Gram ((1 lb))
Salt To Taste
Pepper To Taste
Chilli powder 1/2 Teaspoon
Cumin powder 1 Teaspoon
Chopped coriander 1/4 Cup (4 tbs)
Grated cheese 1/2 Cup (8 tbs)

Directions

GETTING READY:

1. Prepare the brine by dissolving the salt and sugar in half the quantity of warm water, followed by cold water

2. Add the chilli powder and mix.

3. Shave the bottom off the apples and cut the tops off as well.

4. Using a small knife, score around the apple and use and ice cream scoop to make a cavity.

5. Soak the apples for 30 mins in this brine.

6. Preheat your oven to 350 degrees.

MAKING:

7. Prepare the filling by sautéing the onion.

8. Add the jalapeno and the ground chicken.

9. Add the salt & pepper, chilli and cumin powder.

10. Mix well, cover and cook for 10 – 15 mins.

11. Uncover and cook till the filling is dry and all the moisture has evaporated.

12. Remove the apples and dry and place on an oven proof tray.

13. Divide the filling and stuff into the apples.

14. Top with cheese and place in a 350 degree preheated oven for a few minutes just till the cheese melts
