When my friends at Greensbury Market sent me some delicious organic boneless skinless chicken breasts I knew I had to make something special with them. I love anything with curry so to me this recipe is perfection. The peanut sauce is sweet, a little spicy, and out of control good. In a ziplock bag add the chicken strips, yogurt, garlic, ginger, curry, salt, and pepper. Squish it all around so all the strips are coated evenly. Let it marinate for 30 minutes or longer if you can. You can do this and leave them overnight if you want! The flavor only gets better the longer you marinate.

Coconut milk | 1/3 Cup (5.33 tbs) | |

GETTING READY
Preheat the oven to 400 degrees F. Line a baking sheet with foil and set side.
In a Ziplock bag, add in the chicken strips, yogurt, garlic, ginger, curry, salt, and pepper. Squish it well and let it marinate for 30 minutes to overnight.
MAKING
Place the chicken into skewer through the strips and place over the prepared baking sheet.
Place in the oven for 7 minutes.
For the sauce – In a small saucepan, over medium high heat, add in the peanut butter, coconut milk, soy sauce, brown sugar, red curry paste, and lime juice. Cook until sugar is dissolved. Take out from the pan and place in a small bowl. Set aside.
After 7 minutes, take the chicken out and flip. Cook for another 7 minutes on other side.
SERVING
Serve chicken with the peanut sauce along with some lime wedges and sprinkle with some chopped cilantro and peanuts.
