Haryana Aloo Pulao which is also known as Haryana Aloo Chutney Pulao is a traditional rice recipe from the States of Haryana.
Baby potatoes | 1 Packet , peeled | |
Long grain rice | 2 Cup (32 tbs) | |
Ghee | 3 Tablespoon | |
Cinnamon stick | 1 Inch | |
Cloves | 4 | |
Bay leaves | 2 | |
Salt | To Taste | |
Water | 5 Cup (80 tbs) | |
For chutney: | ||
Coriander leaves | 1 Cup (16 tbs) | |
Mint leaves | 1/2 Cup (8 tbs) | |
Ginger paste | 1 Teaspoon | |
Garlic paste | 1 Teaspoon | |
Green chillies | 4 | |
Anardana | 1 Tablespoon | |
Fennel seeds | 1 Teaspoon |
GETTING READY:
1.Wash and soak the rice for 20 minutes.
MAKING:
2.Take the potatoes and apply half the chutney and pick it with a fork.
3.Take a vessel and heat the ghee. Add the bay leaves, black cardamom, cinnamon, cloves and fry for a few seconds.
4.Add the rice and sauté for 5 minutes. Add the potatoes and the remaining chutney, salt and sauté for 3-4 minutes.
SERVING:
5.Add 5 cups of water and cover and cook till done and serve hot with an onion raita
