This is an extremely flavorful and easy Cajun recipe, that is sure to please! I prepared all of this on a Kamado Joe grill, so just imagine how easy it is on a stove top. It's hard to explain the flavor, but done the way I show here, the flavors will scream "Cajun Cuisine".

Strong brewed coffee | 3/4 Cup (12 tbs) | |

Whole milk | 2 1/2 Cup (40 tbs) | |

Old fashioned grits | 1 Cup (16 tbs) | |

GETTING READY
1. Prepare the Kamado Joe for cooking. Bring up the temperature to 400 F.
MAKING
2. Place shrimps in a bowl. Throw in some cajun rub. Drop in grapeseed oil and coat them well. Season with kosher salt and black pepper and red pepper flakes.
3. Put the shrimps on the skewers and place them on the grill grates. Grill each side for 4 minutes. Slide them onto aluminium foil and wrap it up for later use.
4. Heat a pot. Add milk and water to the pot. Drop in unsalted butter. Season with cracked black pepper and salt. Bring it up to simmer. Add old fashioned grits and cook until done. Throw in parmesan cheese and mix it all in. Keep grits aside until needed.
5. To prepare red eye sauce, heat a cast Iron skillet on a grill. Add grapeseed oil and andouille sausages. Render and brown the sausages.
6. When the sausages start to change color, add chopped red onion and garlic. Saute them together. Throw in Cajun seasoning. Mix it all well.
7. Pour chicken stock, strong brewed coffee, worcestershire sauce, butter and tabasco sauce. Simmer and let it reduce to 1/3rd.
FINALISING
8. Drop in grilled shrimp to the red eye sauce. Heat it through.
SERVING
9. On a platter, spread cooked grits. Spoon sausage and shrimps with red eye sauce over the grits. Garnish with spring onions and serve.
