Now that we have the fillets removed from the Fresh Salmon, we now need to clean up the fillet before we begin to portion it out. So that means that we need to remove the excess fat from the fish, as well as remove the pin bones as well. This is not a difficult task, so the best thing to do is to work at your own pace when preparing your fresh fish.
