Betty's Roasted Red Peppers and Steamed Green Peas

Betty demonstrates how to make Roasted Red Peppers and Steamed Green Peas. I chose this combination of vegetables to create a "Christmas-y" red and green look for my holiday table.

Ingredients

Red bell pepper 2 Large , rinsed, dried, cut into wide lengthwise slices
Freshly ground peppercorns To Taste
Freshly ground sea salt To Taste
Extra virgin olive oil To Taste
Frozen green peas 2 Pound

Directions

GETTING READY

1. In a medium to large bowl, place red pepper slices.

2. Season it with salt and peppercorns.

3. Drizzle olive oil and rub with hands to coat well.

4. Place a wire rack over a baking pan, and lay pepper slices on the rack.

5. Drizzle any remaining seasoned oil in bowl over the pepper slices.

6. Preheat oven to 400 degree F.

MAKING

7. Pop the pan in oven and roast pepper slices for 10 minutes.

8. Using tongs flip pepper slices and roast for another 10 minutes.

9. Turn the oven to broil and allow it to sear for a minute.

10. Meanwhile, in steamer, steam peas until tender.

11. Remove pepper slices from oven and place them on the outer edge of a serving bowl.

12. Put steamed peas in the center of the ring of roasted pepper. Leave the tips of pepper open to show around the edge.

SERVING

13. Serve roasted red pepper and steamed green peas immediately.

TIPS

Peas should be tenderer than crisp tender.

If you do not have steamer, boil it in water. Make sure that the peas are not overcooked.
