In this video, Betty demonstrates how to make Roast Chicken for the Christmas table. This is an 8-pound roaster.

Water | 1/2 Cup (8 tbs) | |
Butter | 1/2 Cup (8 tbs) , softened, divided | |

GETTING READY
1. Preheat oven to 350 degree F.
2. Rinse chicken and pat dry with paper towel.
3. In a roasting pan, pour ½ cup water and set aside.
MAKING
4. Rub ¼ cup butter and season with salt on outside and inside of chicken.
5. Place chicken in roasting pan, tucking wings toward the back, and cover with a lid.
6. Pop the pan in oven and bake for 2 ½- 3 hours or until it reaches an internal temperature of 180 degree F when measured in the deepest part of thigh area, removing lid for the last ½-hour. When lid is removed, baste roaster with the remaining ¼ cup butter.
7. Remove pan from oven and place meat on cutting board. Tent with aluminum foil for 10 minutes.
SERVING
8. Slice, as desired, and serve immediately.
