For apple ale reduction | ||
Ale | 1 Bottle (1 l) (Redds Apple Ale) | |
Apple juice | 1/4 Cup (4 tbs) | |
Brown sugar | 1/2 Cup (8 tbs) | |
Apple vinegar | 1/4 Cup (4 tbs) | |
Cinnamon | 1/4 Teaspoon | |
Kosher salt | 1 Pinch |
GETTING READY
1. Cut the turkey in half as shown in the video.
MAKING
2. On a large piece of foil place the turkey and spread butter on the skin. Place some pancetta on the outer side and flip.
3. Spread some butter in the cavity and fill it with herbs (rosemary, sage, thyme), followed by mixed vegetables and apple. Wrap the turkey tight with foil. Repeat the step for the other half.
4. Place the wrapped meat on Weber, skin side down over indirect heat. Cover and cook for 30 minutes, flip and cook for another 30 minutes at 350-375 degree F.
For Apple Ale Reduction:
5. In a saucepan, mix ale, apple juice, brown sugar, apple vinegar, cinnamon, and salt. Bring it to a boil. Reduce the flame and simmer until nice and thick (glaze consistency)
FINALIZING
6. Remove the turkey from heat, open the foil, drain the liquid, spread some butter, sprinkle seasoning and place it back on grill (uncovered). Cover the Weber with lid and cook for 30-60 minutes or until the internal temperature reaches 175. Glaze meat with the reduction once it reaches an internal temperature of 150 degree.
7. Remove turkey from heat and let rest before carving.
