You can roast carrots easily with a few ingredients. I like to buy large inexpensive carrots and roast these with coconut oil, cider vinegar, honey, and salt and pepper. If you don't have coconut oil you can use olive oil or your favorite vegetable oil.
Carrot | 1 1/2 Pound , peeled, cut into 4 inch sticks | |
Coconut oil | 3 Tablespoon | |
Cider vinegar | 2 Tablespoon | |
Honey | 2 Tablespoon | |
Kosher salt | 1 Teaspoon ((to taste)) | |
Pepper | 1/2 Teaspoon , freshly ground ((to taste)) | |
Flat leaf parsley | 1 Tablespoon , chopped finely |
GETTING READY
1.Preheat the oven to 375 degrees F.
MAKING
2.In a bowl add coconut oil, cider vinegar and honey and mix till combined. Put the carrots in it and mix well till they are coated.
3.Transfer the carrots into a baking dish. Sprinkle it with salt and pepper and parsley and bake for around 30 minutes or till done.
SERVING
4.Serve the carrots hot with any spicy main dish of choice.
