Betty's Cherry Pecan Bread

In this video, Betty demonstrates how to make Cherry Pecan Bread for Valentine's Day. This is a quick and easy bread to make, and it looks very elegant when served as part of a romantic meal.

Ingredients

Eggs 1
Canned maraschino cherries 4 Ounce , drained (reserving juice)
Sugar 1 Cup (16 tbs)
Melted butter 2 Tablespoon
Cherry juice 1/4 Cup (4 tbs) (use reserved juice)
Orange juice 1/4 Cup (4 tbs)
Water 1/4 Cup (4 tbs)
All purpose flour 2 Cup (32 tbs)
Baking powder 1 Tablespoon
Baking soda 1/4 Teaspoon
Salt 3/4 Teaspoon
Chopped pecans 1 Cup (16 tbs)
Cooking oil spray 1/2 Teaspoon

Directions

GETTING READY

1. Preheat oven to 350 degree F.

2. Grease a loaf pan with cooking oil spray.

MAKING

3. In a large bowl, beat egg with electric mixer on high speed.

4. Chop drained cherries and stir into beaten egg.

5. Add sugar, melted butter, cherry juice, orange juice, and water.

6. In a separate bowl, mix together flour, baking powder, baking soda, and salt.

7. Add flour mixture to liquid mixture. Beat well on medium speed of electric mixer.

8. Stir in chopped pecans and pour batter into the greased loaf pan.

9. Pop the pan in oven and bake for 40-60 minutes or until a toothpick comes out clean.

10. Remove from oven and let cake rest in pan for 5 minutes on a cooling rack.

SERVING

11. Cut into slices and serve warm or at room temperature.
