Lahmajoun - Turkish Or Arabic Style Pizza

Lahmajoun or Lahmacun is a Turkish Pizza also known as Arabic Pizza. This recipe brings back memories of Istanbul, Turkey where you can find this all over the busy and bustling streets. This is a flatbread meat pizza made by combining tomatoes, peppers, onions and garlic with ground meat - either Lamb or Beef and spices like cumin, smoked paprika, sumac, aleppo peppers, dried mint and finished off with olive oil and pomegranate molasses and parsley into a paste and spreading it over the pizza base to cook.


For the dough:
Whole wheat flour 2 Cup (32 tbs)
All purpose flour 1 1/2 Cup (24 tbs)
Instant yeast 1 Tablespoon
Sugar 2 Teaspoon
Olive oil 1 Tablespoon
Warm milk 1 Cup (16 tbs)
Warm water 1/4 Cup (4 tbs)
Salt 1 Teaspoon
For topping:
Garlic 4 Clove (20 gm)
Diced tomatoes 2 Cup (32 tbs)
Diced red pepper 2 Cup (32 tbs)
Diced green pepper 2 Cup (32 tbs)
Diced white onion 2 Cup (32 tbs)
Chopped green chillies 1 Tablespoon
Finely chopped fresh parsley 1/2 Cup (8 tbs)
Ground beef/Ground lamb 500 Gram
Cumin powder 1 Teaspoon
Smoked paprika 1 Teaspoon
Dried mint 1 Teaspoon
Chilli flakes 1 Teaspoon
Sumac powder 1 Teaspoon
Tomato paste 2 Teaspoon
Freshly cracked black pepper 1 Teaspoon
Salt 2 Teaspoon
Pomegranate molasses 1 Tablespoon
Olive oil 1 Tablespoon



1.Add the 2 flours together.

2.Add the yeast and sugar and mix.

3.Add the olive oil and add the milk a little at a time.

4.Knead well and add the warm water if required.

5.Do not add the salt yet.

6.Place in an oiled bowl and keep in a warm place for 1 hour.

7.Knead once it's risen and add the salt and a little extra flour and divide into fourparts.

8.Roll out each part to a large thin circle.

9.Prepare the topping by first processing all the vegetables together.

10.Add the meat and all the spices, salt, pom molasses, olive oil and parsley and process till it's a thick paste.

11.Spoon and spread over the rolled dough and bake in a 350 degree oven for 15-20 mins.


12.Serve and enjoy!
