Curried Rice Salad is a simple but delicious salad, perfect for lunch or as a side dish. Cooked rice is combined with vegetables, fruit and a special home made dressing featuring sugar, curry powder, and sultanas. Quick to prepare and perfect for using up left over rice, this will become a new regular in your house - give it a go!
Cooked rice | 4 Cup (64 tbs) (I used Long Grain White Rice) | |
Celery stick | 1 , chopped | |
Spring onions | 4 , thinly sliced | |
Red apple | 1 , diced | |
Sultanas/Raisins | 1/2 Cup (8 tbs) | |
Brown sugar | 2 Tablespoon | |
Curry powder | 2 Teaspoon | |
White vinegar | 2 Tablespoon | |
Extra virgin olive oil | 1/3 Cup (5.33 tbs) | |
Salt | To Taste | |
Pepper | To Taste |
MAKING:
In a bowl, combine brown sugar, curry powder, vinegar, olive oil, salt, pepper and whisk well.
Add sultanas and mix well. Cover with plastic wrap and allow to stand for a while.
In a large bowl, combine rice, celery, spring onions, red apple and toss well.
Pour prepared dressing and toss well.
SERVING:
