Israeli Couscous Salad

This recipe really is everything that weelicious stands for: easy, fast and fresh!

Ingredients

Couscous 1 Cup (16 tbs)
Water 1 1/2 Cup (24 tbs)
Salt 1/2 Teaspoon
Yam 1 Small (peeled and cubed)
Cranberries 1/2 Cup (8 tbs)
Fresh mint 1 Tablespoon , chopped finely
Pine nuts 1/4 Cup (4 tbs)
Lemon juice 1 Tablespoon
Olive oil 1 Tablespoon

Directions

MAKING

1. In a saucepan, bring water to boil and add couscous and yam. Let it simmer.

2. In a mixing bowl, combine couscous,yam, dried cranberries, mint, pine nuts, lemon juice and olive oil.

SERVING

3. Serve it with soft drink.
