Couscous | 1 Cup (16 tbs) | |
Water | 1 1/2 Cup (24 tbs) | |
Salt | 1/2 Teaspoon | |
Yam | 1 Small (peeled and cubed) | |
Cranberries | 1/2 Cup (8 tbs) | |
Fresh mint | 1 Tablespoon , chopped finely | |
Pine nuts | 1/4 Cup (4 tbs) | |
Lemon juice | 1 Tablespoon | |
Olive oil | 1 Tablespoon |
MAKING
1. In a saucepan, bring water to boil and add couscous and yam. Let it simmer.
2. In a mixing bowl, combine couscous,yam, dried cranberries, mint, pine nuts, lemon juice and olive oil.
SERVING
3. Serve it with soft drink.
