PBJ French Toast with Berry Maple Syrup is gonna knock yer French socks off! Simple to make, delicious and beautiful with your favorite jelly and peanut butter or almond butter. Sort of like a sweet Monte Cristo sandwich, this French toast variation is really easy, but also festive and seems fancier than it is. Make the berry maple syrup sauce to go over it with any berries you like. Berry sauce can be made ahead of time and kept in the fridge for a week.

Peanut butter/Almond butter/ cashew butter | 4 Tablespoon | |
Jelly | 2 Tablespoon (of your choice) | |
Strawberries/Thin sliced apple / banana | 4 , sliced | |
Eggs | 2 | |
Milk | 1/2 Cup (8 tbs) | |
Vanilla extract | 1 Dash | |
Salt | 1 Pinch | |
Butter | 2 Tablespoon | |
Pure maple syrup | 1/2 Cup (8 tbs) | |
Mixed berries | 1/2 Cup (8 tbs) (fresh or frozen) |
MAKING:
1.For syrup, combine maple syrup and berries in a pot. Heat and allow to simmer for 3 minutes.
2.Once done, allow to cool for 20 minutes.
3.Make sandwich with nut butter, jelly and sliced fruit as shown in the video.
4.In a bowl, combine milk, egg, vanilla, salt and whisk well.
5.Dip sandwiches in egg mixture and fry in butter until it turns browns.
SERVING:
6.Serve with syrup and enjoy!
