Ooey Gooey Rocky Road Cookies gluten-free

This video shows you how to make Ooey Gooey Rocky Road Cookies. They are a flourless chocolate cookie so they are very rich and chocolatey, and also gluten-free (verify that you are using gluten-free marshmallows). They have golden brown marshmallows on top to make them extra decadent.

Ingredients

Powdered sugar 3 Cup (48 tbs)
Unsweetened cocoa powder 2/3 Cup (10.67 tbs)
Salt 1/4 Teaspoon
Egg whites 3 Large ((extra large))
Vanilla extract 1 Tablespoon
Semisweet chocolate chips 2 Cup (32 tbs)
Sliced almonds 2 1/2 Ounce , toast
Mini marshmallow 1 Cup (16 tbs)

Directions

GETTING READY

1. Preheat the oven to 350 degrees F.

2. Line two sheet pans with parchment paper and set aside.

MAKING

3. In a large mixing bowl, sift and combine powdered sugar and cocoa powder.

4. Add salt, egg whites and vanilla. Whisk until well combined.

5. Stir in the chocolate chips and almonds.

6. Scoop out small mounds of batter and place them on to the sheet pan.

7. Top each cookie with 4-5 marshmallows.

8. Pop sheet pan into the freezer for 5 minutes or until slightly chilled (this prevents them from spreading too much in the oven).

9. Pop the pan in oven and bake for 12-13 minutes or until the marshmallows are golden brown.

10. Let the cookies sit on pan for a few minutes, and then transfer them to a wire rack to cool completely.
