Amrakhand comes from two words 'aam' and 'shrikhand' literally meaning mango shrikhand. It is a popular variety of mango yoghurt. It is very popular in Maharashtra and Gujarat. Amrakhand is thick, creamy and has a smooth consistency. It is pleasant yellow in color. It is sweet and has the sourness of yoghurt and the flavor of mango. It is enjoyed in summers.
Ingredients and Preparation
Hung yoghurt, sugar and mango pulp are the main ingredients of amrakhand.
Thick hung yohurt is whipped with sugar till the sugar melts and mango pulp is added. Additional flavouring can also be used improve the flavor.
Other ingredients like saffron, and cardamom nuts can also be added as per personal preference.
Serving
Amrakhand is served chilled with pooris or chapatti. It can also be eaten as a dessert.
