Chef Thierry Marx dreamt of becoming a baker since he was in his teenage, but circumstances and the history of his family in the communal resistance of Second World War led him to join the army. He worked as a paratrooper and performed his duties as an army man in 1980 in the days of darkness in Lebanon. Somehow, he found himself unsuitable for the profession and finally returned to his original profession of cooking.

Born in the former suburbs of Paris and now a district, Menilmontant, Thierry Marx is a Polish Jew. His grandfather was a Jewish communist during the Second World War.

 

The birth place of Marx was also the place where he first time thought of becoming a baker. To fulfill his dream, in 1978 he associated himself with Compagnons du Devoir. This is a training program involving young talents to rediscover their capabilities through learning and traveling in France. Thierry Marx, being an enthusiastic learner earned ‘Cap’ (Certificate of Professional competence, French diploma) in pastry making. But, he had left his dream for joining army to serve the nation.

 

Somehow the situations again imporved for him in the field of cooking and since then he did not look back. He worked in many famous French restaurants in Paris and proved his mettle.

  • After making his mark being a Chef, The Regency Hotel, Sydney was his next step towards the success.
  • Thierry Marx earned his first Michelin Star in 1996 for rocking the Val de Tours with his exemplary cooking performance.
  • In 2000, he gained his second Michelin Star and hope to earn the third one in 2004.
