Almond Pudding

 

Almond pudding, also called as almond jelly or almond tofu is a popular dessert in Asian countries like Singapore, Malaysia, Taiwan, Hong Kong and Japan. It is not made of almonds. It is made of apricot kernels( southern Chinese Almond) but has a similar flavor. The texture is similar to tofu. The name, almond pudding, which is misleading, is derived from the usage of the southern Chinese Almond and not the usual almonds( botanically Prunus dulcis).

 

 

Ingredients and Preparation

 

Traditionally, almond pudding is made of southern Chinese almond (apricot kernels), sugar and agar. Now a days, modifications have been done and milk is used along with almond extract and gelatine is used instead of agar.

Apricot kernels are soaked in water and the skin is removed and it is ground with water and almond milk is extracted. This is heated and sweetened with sugar and agar is used as a setting agent and it is refrigerated till set.

 

 

Serving

 

·         Almond jelly is served with freshly cut fruits or compote and fruit sauces.

·         It can also be served with chocolate sauce.

 

 

Popular Variations

 

·         Panna cotta – This is an Italian dessert made of cream and gelatine. The method used to make it is very similar to almond pudding. It even looks similar.

·         Almond jelly is not very high in calories and fat.

·         Apricot kernels are not very good for health as they contain cyanide which is poisonous. A better way to make his dessert is by using milk and flavouring it with almond extract.
