Zucchiini Fries with Sweet Onion Dip

You can make all kinds of different oven fires, but we really love zucchini with this super delicious sweet onion dip.


Zucchini 2 , halved and thinly sliced
Olive oil 1 Tablespoon
For breading
Breadcrumbs/Brown rice cereal 1 Cup (16 tbs)
Nutritional yeast 1/4 Cup (4 tbs)
Garlic powder 1 1/2 Teaspoon
Cayenne pepper 1/2 Teaspoon (Optional)
Salt and pepper 1/2 Teaspoon
For onion dip
Sweet onion 1
Cannelini beans 1 Cup (16 tbs)
Nutritional yeast 1 Tablespoon
Agave 1 Teaspoon
Spicy mustard 1 Teaspoon
Worcestershire sauce 1 Teaspoon
Salt 1 Pinch



1. Preheat the oven to 425 degrees F.

2. Roast the onion in oven for an hour. Set aside to cool. Increase the temperature of the oven to 450 degrees F.


3. In a Ziploc bag, add in all the ingredients of breading and shake well.

4. Add in the zucchini to the breading bag and coat well.

5. Lay down the zucchini slices on the baking sheet not overlapping each other.

6. Bake in the oven for 20 minutes, after that flip them over and cook for another 10 minutes.

7. For onion dip – peel the onion and add into a blender along with other ingredients. Blend until smooth.


8. Serve the zucchini fries with onion dip.
