Buckwheat Spelt Apple Cake

Using no sugar or butter, this easy to prepare apple cake, made effortlessly using the Boss, includes spelt wheat. This delicious cake goes down a treat with a cup of tea.

Ingredients

Spelt flakes 1 3/4 Cup (28 tbs)
Buck wheat 1 Cup (16 tbs)
Apple sauce 1/3 Cup (5.33 tbs)
Eggs 2
Baking powder 4 Teaspoon
Reduced fat milk 2/3 Cup (10.67 tbs)
Baker's sugar 3/4 Cup (12 tbs)
Vanilla extract 1 Teaspoon
Macadamia nut oil 1/2 Cup (8 tbs)
Apple 1 , cored, thinly sliced
Apricot jam 1 Tablespoon

Directions

GETTING READY:

Preheat the oven to 350F.

Grease cake pan and keep it ready.

MAKING:

In blender jug, combine spelt flakes and buckwheat. Process using mill setting for 2 minutes until finely ground.

Add eggs, milk, vanilla extract, apple sauce, oil and pulse 4 times or until the ingredients blend well.

Add baking powder, baker’s sugar and pulse again.

Transfer the ingredients to greased cake pan. Top with apple slices as shown in the video and pop into oven.

Bake for 45 minutes and once done allow to stand for 5 minutes.

Spread apricot jam on top when cake is hot.
