All purpose flour 2 Cup (32 tbs)
Baking soda 1 Teaspoon
Salt 1/2 Teaspoon
Eggs 2 , separated
Buttermilk 2 Cup (32 tbs) (or 2 cups milk plus 2 tablespoons lemon juice)
Butter 1/4 Cup (4 tbs) , melted
Cooking oil spray 1/2 Teaspoon

1. Preheat waffle iron and grease it with cooking oil spray.

2. In a large bowl, mix together flour, baking soda, and salt.

3. In a medium bowl, mix together eggs yolks, buttermilk, and melted butter.

4. Add wet mixture to flour mixture. Use an electric mixer on medium speed to mix until smooth.

5. In a small bowl, beat egg whites with an electric mixer on high speed until stiff peaks form.

6. Gently fold beaten egg whites into the batter.

7. Bake in a preheated waffle iron that has been greased. When waffles are beginning to brown, remove them to a large plate. Continue cooking waffles until all batter is used.
