Easy Chocolate Wafers

Ingredients

Butter stick 6 Ounce , softened
Sugar 1/4 Cup (4 tbs)
Egg 1
Vanilla extract 1 Teaspoon
Flour 1 3/4 Cup (28 tbs)
Unsweetened cocoa powder 1/4 Cup (4 tbs)
Salt 1/4 Teaspoon

Directions

1. In a large bowl, beat butter and sugar with an electric mixer on medium speed until well blended. Beat in egg and vanilla until light and fluff)

2. On low speed, beat in flour, cocoa, and salt until dough is smooth, scraping down side of bowl frequently with a rubber spatula. Wrap dough in wax paper and refrigerate 2 to 3 hours, until firm.

3. Preheat oven to 350°F. Divide dough into 1-inch balls. With floured hands, flatten dough balls into 2-inch rounds and place 2 inches apart on lightly greased cookie sheets.

4. Bake 10 to 12 minutes, or until wafers are firm. Let cool 2 minutes on sheets, then remove to wire racks and let cool completely.
