Swordfish with Charred Tomato Vinaigrette

Ingredients

Vine ripened tomatoes 2 Large
Olive oil 1/4 Cup (4 tbs)
Freshly ground black pepper To Taste (few grinds)
Small onion 1 , peeled and sliced
Jalapeno pepper 1 , cored, seeded and sliced
Garlic 1 Clove (5 gm) , miced
Red wine vinegar 1/4 Cup (4 tbs)
Kosher salt To Taste (optional)
Fresh basil 3 Tablespoon , chopped
Swordfish steaks 24 Ounce , cut at least 2 inches thick (4 steaks, 6 ounce each)
Parsley 3 Tablespoon , chopped

Directions

GETTING READY

1. Start by coring the tomatoes and cutting them into thick slices, also prepare a charcoal, wood, or gas grill or preheat a broiler

MAKING

2. Lay the tomato slices, and brush both the sides with oil and season with pepper

3. On a heavy-bottomed skillet, and lay the tomato slices in the pan in one layer and cook for 2 to 3 minutes on each side to char, heat at high heat

4. Remove the tomato slices from the pan and set aside on a plate, keep repeating the above procedure, till all the slices have been charred

5. In a pan, put onion slices and cook over high heat for 2 to 3 minutes, keep stirring, till the onions start browning, also add jalapeno pepper and garlic to the pan,and cook for another 2 to 3 minutes, keep stirring till the tomatoes break up

6. On the tomatoes, add vinegar and 2 tablespoons of olive oil, and season with a salt and cook for 1 minute,

7. In a food mill, pass the tomato mixture to remove the seeds and skins, add the chopped basil, lay the swordfish steaks and season with a little salt and pepper

8. Lay the steaks and brush both sides with the remaining oil

9. On a heavy-bottomed skillet, place the seasoned swordfish steaks and heat it over high heat until hot

10. Cook the swordhsh for 3 to 4 minutes each side

11. On a plate, place the swordhsh steak in the center, spoon the warm tomato vinaigrette over it and finally

sprinkle with parsley

SERVING

12. Serve with tomato ketchup or salads
