Betty's Baked Sweet Potato Fries and Dipping Sauce

For sour cream brown sugar dipping sauce
Fat free sour cream 1 Cup (16 tbs)
Brown sugar 1/2 Cup (8 tbs) , firmly packed
For baked sweet potato fries
Sweet potatoes 2 , peeled and cut for french fries (orange)
Salt 1 Teaspoon
Fresh ground black peppercorns To Taste
Extra virgin olive oil 2 Teaspoon (as needed)
Sugar To Taste (Optional)


For Sour Cream Brown Sugar Dipping Sauce:


1. In a small pot, add sour cream and brown sugar.

2. Place the pot on medium flame, stir constantly and bring it to a boil.

3. Remove pot from heat and let cool to room temperature. Cover with plastic wrap and pop it in refrigerator until ready to serve.

For Baked Sweet Potato Fries:


1. In a large bowl, put the cut sweet potatoes. Cover with saran wrap.

2. Pop the bowl in microwave on high for 4-5 minutes or until they are tender crisp when pricked with fork. Check after every 2 minutes and shake bowl around to redistribute potato pieces.

3. Remove bowl from oven, and drain any excess water collected in the bowl.

4. Season potatoes with salt, black peppercorns, and extra virgin olive oil. Toss gently to coat.

5. Line a baking pan with foil and place wire rack on it. Place seasoned potato pieces in a single layer on the rack.

6. Preheat oven to 375 degree F.


7. Place the pan in oven and bake for 10 minutes.

8. Increase the temperature to 400 degrees F and bake an additional 10 minutes, or until they begin to brown and are slightly crisp.

9. Remove from oven and let rest for 10 minutes.

10. Sprinkle sugar on hot potato fries.


11. Serve baked sweet potato fries with dipping sauce.


For sauce, add more brown sugar depending on your taste.

For fried potatoes, you can also parboil them.

You can sprinkle peppercorns, salt, sugar or anything depending on your taste on hot potatoes.
