Nothing better than this combo of sweet potatoes, brown sugar, butter and pecans... just like candy - except it's vegetables!
Sweet potato | 4 Medium | |
Olive oil | 2 Tablespoon | |
Coarse salt | To Taste | |
Butter | 2 Tablespoon , cut into small pieces | |
Light brown sugar | 2 Tablespoon | |
Chopped pecans | 1/3 Cup (5.33 tbs) | |
Cayenne pepper | 1/2 Teaspoon |
GETTING READY
1. Preheat oven to 400 degree F.
2. Peel and cut potatoes lengthwise into half. Then chop each piece crosswise into ½-inch thick chunks.
3. On a baking tray, lay potato pieces. Sprinkle olive oil and salt. Toss to coat well.
MAKING
4. Place the baking tray in the oven, and bake for 25-30 minutes or until tender. Turn potato pieces once while baking, about ½ the way through.
5. Sprinkle butter, brown sugar, pecan, and cayenne pepper on top.
6. Pop baking tray back into the oven, and bake for additional 10 minutes or until sugar is caramelized and hard.
SERVING
7. Serve butter-pecan sweet potatoes hot.
