Microwave Cooked Sweet Potato Pie

Ingredients

Eggs 2
Cooked mashed sweet potatoes 1 1/2 Cup (24 tbs)
Brown sugar 2/3 Cup (10.67 tbs)
Evaporated milk 1 1/4 Cup (20 tbs)
All purpose flour
Cinnamon 1 Teaspoon
Nutmeg 1/2 Teaspoon
Ginger 1/4 Teaspoon
Ground cloves 1/8 Teaspoon
Salt 1/8 Teaspoon
9 inch microwaved pie shell 1

Directions

GETTING READY

1) Arrange all the ingredients.

MAKING

2) With a blender, blend all filling ingredients at low speed in a medium bowl.

3) Microwave at High 3 minutes, stirring once.

4) Reduce microwave power to 50% (Medium).

5) Microwave 7 to 8 minutes, or until very hot and slightly thickened, stirring with whisk every 2 minutes.

6) Into prepared shell, pour the mixture.

7) Microwave on wax paper at 50% (Medium) 10 to 13 minutes, or until set in center, rotating 1/4 turn every 3 minutes.

8) Let the pie cool.

SERVING

9) Serve the sweet potato pie with whipped cream or ice cream.
