Banana Stuffed Sweet Potatoes

Sweet potatoes 3 , hot baked
Butter 3 Tablespoon
Grated orange rind 1 Teaspoon
Orange juice 4 Tablespoon
Dark rum 2 Tablespoon
Chopped pineapple 1 Cup (16 tbs) , well drained
Bananas 3 , sliced
Brown sugar To Taste (As Required)
Grated coconut 1 Tablespoon (As Required)



1. Start by preheating the broiler


2. Take the potatoes and cut it in half lengthwise, also scoop out the flesh, leaving a 1/4-inch shell

3. Take the potatoes and mash it with the butter and also add the orange rind and juice, rum and pineapple and mix properly

4. In a heavy duty aluminum foil, place 2 shells and line shell bottoms with banana sliced and fill with sweet potato mixture

5. Finally boil it under a preheated broiler


6. Top with banana slices, brown sugar and coconut and then serve


A beautiful companion to roast pork, chicken or turkey
