Sweet and Sour Vegetable Skewers

Pineapple 1/2 , peeled, cored and cut into 1
Green peppers 2 Large , seeded and cut into 1
Cherry tomatoes 16
Cucumbers 2 , peeled, halved lengthwise and cut into 1/4
Sweet pickles 4 , cut into 1/4
Scallions 8 , cut diagonally into 1
Peanut oil 2 Tablespoon



1. Take the skewers and pierce pineapple and vegetables on it, in an alternate method

2. Now baste the vegetable skewers with oil

3. Grill the vegetable skewers over hot coals or under the broiler until lightly charred


4. Serve on a bed of plain boiled rice or with roast chicken, pork or beef or grilled fish
