Sweet Potato Pie

Sweet potatoes 2 large peeled, cooked, mashed (1 1/2 cups) OR Sweet potatoes,
Brown sugar 1/2 cup
Salt 1/2 teaspoon
Ground cinnamon 1/2 teaspoon
Milk 3/4 cup
Eggs 2 slightly beaten
Butter or margarine 1 tablespoon , melted
Plain Pastry for 1



1.Preheat the oven to 400 degrees.


2.In a bowl, put sweet potatoes with brown sugar, salt and cinnamon.

3.Combine separately milk, eggs and butter and pour in potato mixture and stir well.

4.Take 8 inch pie plate and line it with the pastry.

5.Trim the edges.

6.Put potato mixture in unbaked pastry shell and bake for 40- 45 minutes.

7.Check for doneness by inserting a knife in the center.


8.Serve warm.
