Side Dish - Lemon, Parmesan and Thyme Roasted Zucchini

Zucchini is one of my favorite vegetables of all time. I love this recipe because it is so easy, healthy, and delicious.


Zucchini 3 , sliced into rounds
Zest of lemon 1
Fresh thyme leaves 1 Tablespoon
Fresh grated parmesan cheese 1/4 Cup (4 tbs)
Red pepper flakes 1/4 Teaspoon
Salt and pepper To Taste
Olive oil 2 Tablespoon



This recipe is so easy it will become of your go-to side dishes! The first thing you want to do is preheat your oven to 350 degrees F



In a bowl, add the zucchini, lemon zest, fresh thyme, Parmesan, red pepper flakes, salt, pepper, and olive oil. Toss well.

Lay on a baking sheet in a single layer and bake for 15 minutes.

Once the zucchini is cooked put the oven on broil and cook for 1 – 2 minutes.



Serve with your choice of bread.
