Delicious carrot cake recipe with maple-orange cream cheese frosting! Carrot cake is soft and spicy and the cream cheese frosting is perfect.
|Grated carrots||2 Cup (32 tbs) (1/2 pound or so)|
|Hot water||1/3 Cup (5.33 tbs)|
|Sugar||1 1/4 Cup (20 tbs)|
|Vegetable oil||1/2 Cup (8 tbs) (canola, safflower, sunflower)|
|Vanilla||1 1/2 Teaspoon|
|Flour||2 Cup (32 tbs)|
|Baking soda||1 1/2 Teaspoon|
|Baking powder||1/2 Teaspoon|
|Cinnamon||1 1/2 Teaspoon|
|Cloves||1 1/2 Teaspoon|
|Cream cheese||8 Ounce|
|Soft butter||1/4 Cup (4 tbs)|
|Powdered sugar||2 Cup (32 tbs)|
|Vanilla extract||1 Teaspoon|
|Maple syrup||1 Tablespoon|
|Orange zest||1 Tablespoon|
|Orange juice||2 Tablespoon (if needed)|
1.Preheat oven to 350F/ 180C.
2.Grease and flour cake pans.
3.In an electric mixer, combine carrots, water, vanilla, sugar, oil, eggs and mix well.
4.In a large bowl, combine flour, baking soda, baking powder, cinnamon, cloves, salt and mix well.
5.Combine carrots mixture with flour mixture and mix well.
6.Pour the mixture into cake pan and pop into oven. Bake for 25-45 minutes (depending upon pan size) and once done, allow to cool completely.
7.For the icing, cream together cheese and butter until smooth and fluffy.
8.Add vanilla, orange zest, maple syrup and mix well.
9.Sift in powdered sugar, orange juice and mix until well combined. Refrigerate until icing.
10.Frost the cake with prepared icing.
11.Serve and enjoy!
