Veggie Garden Cups - Healthy Snacks for Kids

Veggie Garden Cups are the perfect snack to pick up and carry around which makes them a great addition to your UnBake Sale.


Ripe avocados 2 , pitted
Juice of lime 1/2
Salt 1 Pinch
Matchstick carrots 100 Gram ((bolthouse farms matchstick carrots))
Carrot 1 Large , peeled ((bolthouse farms large carrot))
Persian cucumber 1
Cherry tomatoes 4
Breakfast radishes/Red radishes 8
Sugar snap peas 8
Red bell pepper 1
Celery stalk 1
Broccoli florets 1/2 Cup (8 tbs)



In a bowl, spoon the avocado flesh with the lime juice and salt. Mash with a fork until smooth.

Fill each small plastic cup about 1/2 way up with matchstick carrots, followed by 1/4th spoon of the avocado mixture on top. Set aside.

Cut the carrots and cucumbers into 2 inch lengths. Use a paring knife to make 4-5 small notches around the carrot and cucumber pieces. Then slice each one into 1/2 inch slices to form flowers.

Place the carrot flowers and cucumber flowers onto wooden skewers. Top the cucumber flowers with cherry tomatoes.

Cut the red bell pepper and the celery into sticks about the same length as the sugar snap peas.

Place the carrot and cucumber flowers, sliced radishes, sugar snap peas, red bell peppers, and celery into the avocado mixture to create a garden.

Then place the broccoli florets in the open spaces to create grass.



Serve to the kids.
