Gluten-who? Honey you won't be missing gluten at all once you taste this fluffy, moist gluten-free carrot cake! I bet you won't even be able to tell a difference! This gluten-free carrot cake is packed full of sweet, fresh carrots and lightly spiced with cinnamon and brown sugar. And it's super easy to make!


Brown sugar 1/2 Cup (8 tbs) , packed
White sugar 1 Cup (16 tbs)
Canola oil/Vegetable oil 1 Cup (16 tbs)
Eggs 3
Gluten free flour 2 Cup (32 tbs) (Pamela's artisan)
Baking powder 1 1/2 Teaspoon
Baking soda 1 Teaspoon
Salt 1/2 Teaspoon
Cinnamon 1 Tablespoon
Buttermilk 1/2 Cup (8 tbs)
Pure vanilla extract 1 Tablespoon
Carrot 3 Cup (48 tbs) , finely shredded (2
Pureed carrot 1/2 Cup (8 tbs) (optional but great) (Optional)
Sweet coconut flakes 1/2 Cup (8 tbs)
For frosting (double the recipe if you like a thick layer of frosting)
Cream cheese 8 Ounce (at room temperature)
Butter 4 Tablespoon (at room temperature)
Confectioners sugar 2 Cup (32 tbs) (may need more to thicken if desired)
Pure vanilla extract 1 Teaspoon
Walnuts 1 Cup (16 tbs) , chopped
