Stuffed Veal Hearts

Veal heart 2
Chopped onion 2 Tablespoon
Fat 3 Tablespoon
Cracker crumbs 1 1/2 Cup (24 tbs)
Salt 3/4 Teaspoon
Pepper 1/4 Teaspoon
Celery salt 1/4 Teaspoon
Water 1/4 Cup (4 tbs)
Enriched flour 1 Tablespoon
Condensed consomme 1 Can (10 oz)
Whole cloves 2
Whole black peppers 3
Bay leaf 4


Clean hearts, removing arteries and veins; make pocket for stuffing.

Lightly brown onion in hot fat; add cracker crumbs and seasonings; mix well.

Add water.

Stuff hearts with this mixture; close opening and fasten with skewers.

Roll in flour.

Brown in hot fat; add rernaining ingredients.

Cover tightly and cook slowly 1 1/2 hours.
