Crockpot Cooking: Turkey and Stuffing Thanksgiving Casserole

With Thanksgiving just around the corner here in Canada, I thought I would share an easy and delicious crock pot meal that will give that Thanksgiving taste and flavor without all the fuss. It's the perfect meal for empty nesters, students, or people on their own for the holidays.


Boneless skinless turkey breasts 4
Salt and pepper To Taste
Garlic powder To Taste
For magic stuffing mix
Dried bread cubes 4 Cup (64 tbs)
Diced celery 1/2 Cup (8 tbs)
Diced onion 1/2 Cup (8 tbs)
Garlic powder 1 Tablespoon
Salt 1 Teaspoon
Pepper 1 Teaspoon
Fresh mixed herbs 1 Tablespoon (like rosemary, thyme, parsley, and sage)
Low sodium chicken stock 1 Cup (16 tbs)
Melted butter 1/4 Cup (4 tbs)
For mushroom herb gravy
Sliced button mushrooms 4 Cup (64 tbs)
Extra virgin olive oil 1 Tablespoon
Butter/Herb butter 1 Tablespoon
Salt 1/2 Teaspoon
Pepper 1/2 Teaspoon
Flour 1 Tablespoon
Chicken stock 1 Cup (16 tbs)
Chopped fresh mixed herbs 1 Tablespoon (like rosemary, thyme, parsley, and sage)
Sour cream 1 Cup (16 tbs)



For Magic Stiffing Mix

1. In a bowl, mix together cubed bread, celery, onion, garlic powder, salt, pepper, fresh herbs, chicken stock, and melted butter. Set aside.

For Mushroom Herb Gravy

2. In a pan, saute mushroom in olive oil and butter.

3. Season with salt, pepper, and garlic powder. Cook until mushroom starts releasing water and begins to brown.

4. Add flour, stir constantly and cook for another 1 minute.

5. Pour chicken stock and add herbs and sour cream. Bring just to a boil and stir until well blended.


6. Season turkey with salt, pepper, and garlic powder.

7. Into the bottom of a prepared Crockpot or casserole dish, place the turkey breast. Pour the mushroom gravy and cover it with magic stuffing mixture. Cook on low setting for 4-6 hours or bake in 350 degree F oven for 60-90 minutes or until the turkey is cooked through and the casserole is bubbly.


8. Serve hot and enjoy!


You can prepare the stuffing mix and gravy night ahead and assemble in the morning.
