Tropical Trifle

Ingredients

For the sponge
Eggs 2
Concentrated pear and apple spread 1 Ounce (25 Gram)
Whole wheat flour
For the trifle
Sugar free jam 45 Milliliter (3 Tablespoon)
Medium dry sherry 30 Milliliter (2 Tablespoon)
Fruit juice 1/2 Pint (300 Milliliter)
Pawpaw 1
Bananas 2 , sliced
Quark 6 Ounce (175 Gram)
Skimmed milk 90 Milliliter (6 Tablespoon)
Toasted flaked almonds 1/2 Cup (8 tbs) (For Garnish)

Directions

GETTING READY

1. Preheat oven to gas mark 5, 190°C (375°F).

2. In a bowl whisk eggs and fruit spread until creamy.

MAKING

3. To the egg mixture fold half of the flour and mix. Fold in remaining flour carefully.

4. Grease a 18 cm (7 in) sandwich tin with butter and sprinkle flour on it.

5. Gently spoon the egg mixture into it.

6. Keep in oven and bake for 20 minutes.

7 . Invert and cool on the racks.

8. Halve the sponge and spread jam on it.

9. Sandwich together and cut into 2.5 cm (1 in) cubes.

10. Arrange at the bottom of glass dish.

11. Sprinkle sherry over it.

12. Pour fruit juice over it.

13. Halve the paw paw lengthways.

14. Discard seeds and skins and slice the flesh.

15. Layer banana and paw paw slices over sponge.

16. Blend quark with milk.

17. Spread the mixture over fruit.

SERVING

18. Decorate with toasted flaked almonds.
