Sauteed Florida Greens

Kale bunch 1 , washed, dried, stem removed, chopped
Baby spinach 9 Ounce (1 bag)
Salt and pepper To Taste
Olive oil 1 Tablespoon
Garlic cloves 3 , mince
Green olives 1/2 Cup (8 tbs)
Green onion 5 , roughly chopped
Roma tomatoes 3 , roughly chopped
Juice of lemon 1/2 (or use red wine vinegar)



1. In a pan, heat oil, add garlic and cook for about 3 minutes. Add kale and spinach, a handful at a time and cook until wilted. When your last handful goes in, turn the flame to low, cover and simmer for 3 minutes.

2. Squeeze lemon on top of green, add green olives and give it a good mix. Transfer to a nice serving platter and top it with chopped tomato and green onion. Season with salt and pepper.


3. Serve and enjoy!
