Home Made Sun Dried Tomatoes are delicious and easy to make. Fresh Roma Tomatoes are halved and hollowed, then anointed with extra virgin olive oil infused with garlic and thyme. Dried at a low heat in the oven, these glorious morsels are perfect in salads, with pasta, added to sauces or simply eaten on their own - give it a go!
|Roma tomatoes||8 , cut as shown in the video (Egg Tomatoes or Italian Tomatoes)|
|Garlic||2 Clove (10 gm) , crushed|
|Fresh thyme||3 Teaspoon|
|Extra virgin olive oil||1 Cup (16 tbs)|
Preheat oven to 200°F/100°C.
Line baking tray with aluminium foil.
In a measuring jug, combine garlic, thyme, olive oil and mix well.
Place tomatoes on baking tray and pour olive oil mixture over it.
Season with salt and pepper.
Pop into oven and bake for 1 ½ hours-2 hours.
Allow to cool completely and store in refrigerator in an airtight container.
