Baked Tofu "Egg"vocado

Something quick to take to that Sunday brunch potluck. Mmmm Mmmmm.

Ingredients

Avocado 3 , halved
Cracked pepper To Taste
For tofu mixture
Firm tofu 100 Gram
Almond milk 6 Tablespoon
Salt 1 Pinch
Garlic powder 1/2 Teaspoon
Nutritional yeast 1 Tablespoon
For sauce
White miso paste 1/2 Tablespoon
Almond milk 3 Tablespoon
Turmeric 1/2 Teaspoon

Directions

GETTING READY

1. Preheat the oven to 425 F.

MAKING

2. Scoop out some of the flesh from the avocado and set aside.

3. For tofu mixture – in a food processor, add in all the ingredients and blend until smooth.

4. Fill the avocados with the mixture; reserving 2 tablespoon for the sauce.

5. Place in a bread pan and bake in the oven for 20 minutes.

6. For sauce – in a food processor, add in all the ingredients along with the reserved tofu mixture and blend until smooth.

7. Top the avocados with sauce and garnish with cracked pepper.

SERVING

8. Serve with your favorite bread.
